Innovation Award 2024
Beer&Food Attraction and BBTech expo 2024 hosted the 1st edition of the Innovation Award, organized in partnership with ANGI - Associazione Nazionale Giovani Innovatori.
Many companies took part in a real competition that has awarded, after a selection made by the Evaluation Committee, the most innovative projects at the fair.

CUOR DI PANE - OTUS BREWERY
CUOR DI PANE is a beer brewed with about 50 kg of bread and 350 kg of barley and oat malt. The soaked bread (normal and deglutinated) is recovered by a social cooperative and valued as an ingredient in its own right. During the process, through pauses in mashing and non-selective proteases (enzymes that degrade proteins) we are able to obtain a certified gluten-free product (analysis by accredited companies that certify its absence after analysis).
