Non-alcoholic beer has been gaining popularity in recent years due to increasing demand. Process control is crucial to ensure a safe and quality end product. In this talk, the speakers will give an overview of non-alcoholic beer production techniques and recent scientific publications on the subject. The second part of the talk will focus on microbiological stability, a fundamental aspect for this type of beer.
