It is difficult to draw the boundaries between the traditional and the creative when talking about Lucio Pompili. Much easier to recognize the identity of one of Italy's greatest chefs, cook, of land and hunting, winemaker, farmer, cultivator of the land. Identity that owes much to his Marche region.
The chef of the already starred Symposium restaurant also dresses the shoes of a winemaker, producing excellent local wines.
His new project is called Foraging in which Lucio cooks local products with the stove and fireplace, enhancing the work of local farmers and ranchers, and respecting the customer.
